The cooperative brewery: Implementation of a vinegar factory using exclusively Walloon and circular inputs. Production of vinegar from brewery by-products (beer production waste destined for the sewer), rejected cider and wine, and downgraded barley.

This project aims to develop a sustainable vinegar production system that relies solely on local and circular raw materials.
The vinegar is produced from:
Brewery residues (by-products from beer production that would otherwise be discarded).
Downgraded cider and wine.
Downgraded barley.
This initiative helps reduce food waste, repurpose agro-industrial by-products, and promote a local and circular economy.
